Originated from Italy, this condiment is an aromatic, thick, dark, syrup-like aged type of vinegar, prepared by the reduction of cooked grapes. Balsamic vinegar, though popularly referred to as wine vinegar is not made from wine, but is prepared from grape pressings, whose fermentation process has been hindered. The best balsamic vinegar is prepared in the hills of Modena, in Italy, where unique and flavorful balsamic vinegar is formed. This vinegar is known to be a cut above the other types of vinegarĀ Unlike the sharp taste of vinegar, balsamic vinegar has a rich, sweet flavor. You need to taste it to believe it!

Key Characteristics:

  • Color: Deep brown, almost black in appearance.
  • Flavor: A balance of sweet and sour with complex notes of fig, cherry, molasses, and sometimes caramel or dark chocolate.
  • Texture: Thick, syrupy, and viscous, especially in traditional, well-aged varieties.
  • Aging Process: Aged in barrels made from various types of wood (like oak, cherry, and chestnut), which impart additional flavors as the vinegar matures.
  • Uses: Ideal for salad dressings, marinades, drizzling over fresh fruits (like strawberries or figs), and even as a finishing touch on dishes like grilled meats, roasted vegetables, and cheeses.

The longer the vinegar is aged, the more intense and mellow the flavor becomes, making high-quality balsamic vinegar prized in gourmet cooking. Cheaper varieties may be less aged and sometimes mixed with other vinegars, but traditional balsamic vinegar offers the full complexity of flavor.

Denissimo DBV

Our Denissimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional ā€œBatteriaā€ of Modena. Our exclusive ā€œDenissimoā€ contains less than 1% barrel aged Italian red wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper, and cherry wood. This exquisite and exceedingly rare 1.36 density balsamic is extremely complex boasting flavor notes of cherry wood, dried fruits, raisins, figs, along with hints of dark chocolate and malt.

Beautiful on Italian style deserts with cream or as a glaze for roasted vegetables. Add a shot to an ā€œaffogatto floatā€, which calls for a tall mug of vanilla gelato scoops covered with coffee.

OneĀ of our finest grades of aged balsamic condimento from Modena, Italy is produced in the Traditional Style.Ā  It is aged using the Solera System in chestnut, oak, mulberry and ash barrels.

With 4% acidity it exceeds Four Leaf Quality with an astonishingly high natural density of 1.28+.Ā  This spectacular density comes naturally without thickeners or added sugar, from a lengthy aging process and cooking in copper kettles.Ā  It is exceedingly rich, complex, and dense, and pairs beautifully with any olive oil in our collection.Ā
